Kosher Collagen Chocolate Mousse

Ingredients:

  • 1 cup kosher collagen peptides (such as Vital Proteins or Garden of Life)
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup chopped dark chocolate (at least 70% cocoa)
  • Pinch of salt

Instructions:

  1. In a small bowl, whisk together the kosher collagen peptides, cocoa powder, and sugar.
  2. In a separate bowl, whip the heavy cream until stiff peaks form. Set aside.
  3. In a separate saucepan, melt the butter and chocolate over low heat, stirring occasionally.
  4. In a separate bowl, whisk together the eggs and vanilla extract.
  5. Add the melted chocolate mixture to the egg mixture and whisk until smooth.
  6. Add the collagen mixture to the egg mixture and whisk until well combined.
  7. Fold the whipped cream into the chocolate mixture until no white streaks remain.
  8. Pour the mixture into individual serving cups or a large serving dish.
  9. Chill in the refrigerator for at least 2 hours or until set.
  10. Serve chilled and enjoy!
